We recommend Horai for your first taste of Ippodo matcha, as it is a smooth blend with umami and just a hint of astringency. Try this matcha as koicha to experience the full depth and nuances of its character. As usucha, Horai is an accessible tea to serve to beginners and connoisseurs alike at teatime. For matcha lattes, we usually recommend a medium-to-light category matcha with more astringency, but some will choose Horai, for its bright color, umami, and soft astringency.

I used to love coffee, but it started to worsen my anxiety so I switched over to matcha. I find that sipping on a cup of matcha throughout the day gives me sustained energy levels and I never feel an afternoon crash. I am also very picky about my matcha - there are a lot of brands that actually make me nauseous when I drink matcha + water on an empty stomach. Ippodo tea is so high quality - it has wonderful flavor and goes down so easily! I love how there is so much product in each tin. Definitely going to be ordering this for years :)

Own it in lattes
I am new to matcha drinking and still learning a lot. I ordered 2 types, the Sayaka and the Ummon. Both were recommended for beginners. I found the Sayaka a bit more pleasant than the Ummon. Since this is new for me I have not yet developed my palate or the language to best describe the flavor. I'd say that the Sayaki tasted more like a tea and the Ummon more like straight coffee. It doesn't taste like coffee, but in that same category, versus, an herbal tea, or a juice. For an 8oz cup, I used 1t of Sayaka to 80z of water at 175 degrees, frothed with a teaspoon of Manuka honey. I enjoyed it, but it did not knock my socks off. It was mild, smooth, good weight and feel in the mouth. I could taste a very slight bitterness. On a scale from 1 -3 for me, I'd rate it right in the middle (3).
