The tea plant, a member of the camellia family, has a natural sweetness when it begins to grow, but it becomes more astringent under the sun. To prevent such astringency developing, the whole tea field is covered to create shaded areas for selected tea plants to grow. The plants are kept in near-darkness as new leaf buds form and grow, until they are ready for picking. In addition, to produce a rich flavor, the cultivators use sophisticated techniques and long experience to ensure that fertilizer entering through the plant's roots reaches the leaf buds. Competitions held each year at local shows allow growers to show off their techniques and skills. Best of all, the matcha entered in such competitions is made available as "Premium Select Matcha."

Produced from tea plants that receive constant care and attention and can absorb plenty of nutritious fertilizer, this matcha is highly valuable and very rare. The amounts produced are not nearly large enough to support year-round sales.
