For matcha lattes, we usually recommend a medium-to-light category matcha with more astringency, but some will choose Sayaka for its bright color, umami, and soft astringency.

I'm a newbie to the matcha world so figured I'd start with this Sayaka line (as recommended by the site). So happy I did - love the taste and will be back for more!
It's easy to pick out the sweetness and umami in this matcha. It does have some pretty identifiable astringency though. I enjoyed trying it, but I'd be willing to spend a extra for the Shoin, as that lacks the pervasive bitterness of this matcha.
