Wakaki-shiro has a refreshing, balanced taste, with just the right amount of astringency. It's best prepared as the thinner usucha, and a good choice for people who enjoy matcha on a daily basis. It also works well for baked goods or cooking with an especially beautiful matcha color. If you would like to prepare your matcha as the thicker koicha, we recommend Kan-no-shiro and higher grades.
Characterized by its rich aroma, full-bodied mellow sweetness, and vivid green color, matcha is a favorite among tea lovers in Japan. Ground from shade-cultivated tea leaves, matcha is rich in theanine -- an amino acid responsible for matcha's umami (translates to “savory deliciousness” and is also known as the fifth taste). Generally, the higher the grade, the richer the umami taste.

This tea arrived promptly and brewed up a lovely color with excellent taste, nicely herbal without being bitter and was delicious iced. And at this price I will also use some for baking and to make ice cream. I will buy again!
I am new to matcha, but I decided to order from Ippodo based on a recommendation from a friend. From what I can tell, this is a good tea. The powder is a deep, vivid green. I’ve had tried both lattes and plain hot tea; both were good. It was a little bitter, but no more bitter than regular green or black tea.
This variety is packed in a foil pouch which is placed inside a small box. To store it, I fold up the top of the pouch and seal it with a paper clip. Then I put the pouch inside a small Tupperware.
The matcha is great for baking. As always the quality of Ippodo matcha is phenomenal giving my cookies, cheesecakes, etc a great taste. Shipping was fast too, which made me happy while we are all quarantined.
I'm sure this matcha would also be great for drinking with just water, but it is fantastic mixed with milk. You can tell just by the color that this is a good quality matcha, miles better than what you can get at the grocery (or at least at grocery stores near me!). Great vibrant green color, not too strong of a flavor. Very good!
I am so grateful that Ippodo matcha is now available in the US. It has been my daily drink for many years and I loved going to the Kyoto store to taste and purchase. Then I bought online, but had to pay for shipping from Japan. Thank you for your fast service.
