These are our standard recipes for brewing and preparing our tea. Whether you are craving a cold brew tea for the summer or need the comfort of a cozy matcha latte, we hope these instructions will help you enjoy your teatime.
How to Make Matcha
Sift matcha
2 g (0.07 oz)
1.5 heaping tea ladles or 1 level teaspoon.

Add hot water
60 mL (2 oz)
80°C (176°F)
First pour water into teacup to cool it to 80C°, then pour into tea bowl.

Whisk
15 seconds
Whisk vigorously 15 seconds, making an "M" shape.

Sift matcha
4 g (0.14 oz)
3 heaping tea ladles or 2 level teaspoons of matcha into a mug or bowl.

Add hot water
30 mL (1 oz)
80°C (176°F)
Cool boiling water to 80C° in teacup, then pour into bowl, just covering matcha powder.

Whisk
15 seconds
Mix slowly for 15 seconds moving back and forth.

Sift matcha
2 g (0.07 oz)
1.5 heaping tea ladles or 1 level teaspoon.

Add hot water
100 mL (3.4 oz)
80°C (176°F)
First pour water into teacup to cool it to 80C°, then pour into tea bowl.

Whisk
15 seconds
Whisk vigorously 15 seconds, making an "M" shape.

Add milk
100 ml (3.4 oz)
Pour warm or foamed milk into mug.

Sift matcha
2 g (0.07 oz)
1.5 heaping tea ladles or 1 level teaspoon.

Add hot water
60 mL (2 oz)
80°C (176°F)
First pour water into teacup to cool it to 80C°, then pour into tea bowl.

Whisk
15 seconds
Whisk vigorously 15 seconds, making an "M" shape.

Add i1ce
1-2 ice cubes
Add ice, mix slightly, and it's ready!

Sift matcha
2 g (0.07 oz)

Add cold water
60 mL (2 oz)
5°C (40°F)
Chill water with ice and strain before use.

Whisk
15 seconds
Whisk vigorously 15 seconds, making an "M" shape.

How to Make Gyokuro
Measure the leaves
2 tbsp. (10 g / 0.35 oz)

Add hot water
80 mL (3 oz)
60°C (140°F)
Cool boiling water to 60°C by transferring 3 times.

Brew
90 seconds

Serve
Pour out every last drop.

Measure the leaves
2 tbsp. (10 g / 0.35 oz)

Add ice water
210 ml (7 oz)
Chilled water

Brew
15 minutes

Serve
Pour out every last drop.

Measure the leaves
2 tbsp. (10 g / 0.35 oz)

Add boiling water
240 mL (8 oz)
100°C (212°F)

Brew
30 seconds

Serve
Pour out every last drop.

Measure the leaves
2 tbsp. (10 g / 0.35 oz)

Add boiling water
210 mL (7 oz)
100°C (212°F)

Brew
60 seconds

Serve on ice
Pour into glass or small pitcher full of ice.

How to Make Sencha
Measure the leaves
2 tbsp. (10 g / 0.35 oz)

Add hot water
210 mL (7 oz)
80°C (176°F)
Cool boiling water to 80°C by transferring once.

Brew
60 seconds

Serve
Pour out every last drop.

Measure the leaves
2 tbsp. (10 g / 0.35 oz)

Add ice water
210 ml (7 oz)
Chilled water

Brew
15 minutes

Serve
Pour out every last drop.

Measure the leaves
2 tbsp. (10 g / 0.35 oz)

Add boiling water
210 mL (7 oz)
100°C (212°F)

Brew
60 seconds

Serve on ice
