For seasoned gyokuro drinkers who prefer a slightly lighter umami taste, Kakurei is an excellent choice. Still characteristic of gyokuro’s green umami flavor and aroma, Kakurei will have a shorter, lighter aftertaste that is popular for casual, relaxed tea drinking. Being a shade-cultivated tea, gyokuro is rich in theanine-an amino acid responsible for its full-bodied, mellow, and thick sweetness. In Japan, there is a special name for this taste: umami. Generally, the higher the grade, the richer the umami taste. Gyokuro fans love this tea for its sweet, less-astringent nature and its deep-green aroma.
- Place 10g (2 tbsp.) in kyusu teapot
- Add 210 ml (7 oz) of chilled water
- Brew for 15 min.
* Make another pot using the same tea leaves. Brew the 2nd pot for 7min., and the 3rd pot for 3 min.
I like this variety, umami flavor comes through and I get four good pots per batch. Good value too.
