Matsu is our sencha blend with the most astringency and the lightest body. Sharp, green, and eye-opening.
We recommend Matsu for those who prefer a sencha with more astringency, and a hint of sweetness. This tea’s green, bitter taste pairs well with sweets and feels refreshing served with meals. And, Matsu has a light body that makes it suitable for brewing in large batches and drinking throughout the day. In addition to the standard sencha brew with 176°F water, you can try brewing Matsu with hotter water for 30 seconds, producing an even more refreshing, aromatic character.

"Sharp, green, and eye-opening." This is sharp, all right. Kind of wishing I had a piece of mochi, or some chocolate to pair with it, because it's bitter and proud of it. Then again, I was fumbling around looking for a clean cup and ended up oversteeping the first pot.
The leaf is a gorgeous pine needle green (like the name says) with classic sencha "spinach" aroma and some very nice umami bringing up the rear behind the sharply armed vanguard. If you're concerned about it being too bitter, try a shorter steep time (30-40 seconds). My second steep was much better balanced and let the umami shine.
