Matcha is usually not released immediately after harvest. Instead, it is “rested” for a period of many months to mature the flavor. However, this unique New Harvest Matcha was made from grinding the new tea leaves harvested this year, 2020.

Having struggled for quite some time with inferior and relatively old matcha powder, I have been delighting in the ease with which I can make a beautiful frothy chawan of tea.!
Great tasting matcha tea, but what is more outstanding is the customer service I received from Sebastian. I had some damage on this order and Sebastian instantly replaced the damaged items and expedited the delivery. He also threw in something extra on a different order when an item was back ordered.. So fresh. Truly the taste of spring and summer. Nothing like making this early in the morning to start my day.
I'm not an expert and I think all matcha pretty much tastes the same, but compared to the traditional tea ippodo has, this tastes uniquely different. It seems to be more concentrated than the regular flavor, and it is colored a bit more vividly green.
This definitely has a different, deeper flavor than regular matcha.
Full disclosure: I don't know what "umami" or "astringency" means even though it's all over the description. Maybe I just don't have the range
