Our recommendation for people new to our matcha, Sayaka is a more light-hearted, smooth tea in the rich category. Its sweetness and umami are accompanied by a hint of bitterness.

We recommend Sayaka for your first taste of Ippodo matcha, as it is a smooth blend with umami and just a hint of astringency. Try this matcha as koicha to experience the full depth and nuances of its character. As usucha, Sayaka is an accessible tea to serve to beginners and connoisseurs alike at teatime. For matcha lattes, we usually recommend a medium-to-light category matcha with more astringency, but some will choose Sayaka for its bright color, umami, and soft astringency.

The standard by which I judge other matchas

Upon getting into Matcha, this early trial set the standard for later flavors. It has a lovely flavor, rich without becoming bitter or overpowering. I've yet to find the perfect matcha for drinking 100% unadulterated, but even the lightest touch of sweetness and creme makes a smooth rich experience second to none I've tried.

I've tried other popular suggestions like Matcha Sense and Sugimoto Reserve, and staples like Itoen. The former really only works for me in a latte, and Sugimoto is straight up overpowering. But it all comes down to your palette: Experiment!

I'm excited to try all the varieties offered by Ippodo, and happy to have this old favorite always ready to turn back to.

Amazing but wont order again.

Hands down the best Matcha I've ever tasted, but very pricey to use daily. It will probably be my last ordering from here; my last order was shipped by DHL Express and had to pay a hefty duties/taxes (about $30+ on top of your expensive order) totally not worth it for me. I preferred when they were using USPS. Love Sayaka & Ummon have been drinking it for quite some time now, I love the colour and the taste. Also order Premium Select Matcha (can't wait to give that a try).

Umami

I tried Ikuyo when I first got my matcha from Ippodo. It was great. I love its flavor and the unique bitterness. I wanted to try something richer and different for comparison and then am amazed by Sayaka. It's so rich in flavor and umami. Must try!
