Taste notes

Ikuyo is a balanced matcha with astringency, umami, and sweetness in proportion. Its medium-light body is joined by a gentle, but bright aroma, like sun-dried straw. As usucha, it is a good option for everyday teatime, served straight and with cookies, cakes, or other sweets. One of our top recommendations for a matcha latte, Ikuyo has slight astringency that pairs well with the milk, and its bright green color makes for a photogenic beverage.

Ways to prepare

Usucha
Thin matcha
1. Sift Matcha
2 g (0.07 oz)
1.5 heaping tea ladles or 1 level teaspoon
2. Add hot water
80°C (176°F)
60 mL (2 oz)
First pour water into teacup to cool it to 80°C, then pour into tea bowl.
3. Whisk
15 seconds
Whisk vigorously 15 seconds, making an "M" shape.
Matcha latte
Matcha & milk
1. Sift Matcha

Literally so good. I've always been cheap and bought the lower quality culinary matcha from Amazon but I splurged and had to see if it was really worth the price. Unfortunately it was just that good and now I'm hooked! My pallet and my wallet will never be the same. This was the first matcha I've tried where I could taste the umami and the layered bitterness rather than the usual nondescript grassy bitter flavor I get from matcha. 10/10 will be rebuying when I run out.

I've bought a few different types of matcha from this store now, ranging in price from the lowest lows to fairly high. After a few orders I decided Ikuyo is my favorite. Balanced flavor overall but leaning more toward bitter, I decided this was my new go-to. So glad to have caught the 100g bag while it was in stock!

Ikuyo Matcha

I used to purchase my matcha direct from Japan, but the pandemic put an end to that. I've tried a few state-side vendors but non have had the freshness of Ippodo U.S. I've settled on Ikuyo for my daily go-to matcha. For the price point, it's a solid matcha. Sometimes I'll purchase some of their lower-end matchas and mix .5 grams into Ikuyo, just to get a little different flavor.

What a way to begin the day! I’m convinced Ippodo crafts the best matcha we all can find. My husband and I have yet to purchase anything less than extraordinary from them! I love this as a matcha latte, the tea balances with the milk so nicely. This matcha has a brilliantly mild, distinct flavor. (We have been using Trader Joe’s Oat Beverage - it’s such a divine combination!) This matcha is exceptionally soothing.
