Taste Notes

Shincha is sencha tea that is released immediately after its harvest. This tea has a uniquely fresh, bright, snappy, and energetic character, and is only available once a year.

Shincha will ship from our headquarters in Kyoto about ten days after it is picked. Each year variables such as the weather conditions in Kyoto will affect the nuances of Shincha’s character, so we are excited to try this year’s harvest in a little over one month. In general, every year of Ippodo Shincha has a full flavor, a lingering aftertaste, and the strength and liveliness that only freshly harvested tea can provide.

Our regular sencha also has a character worthy of appreciation. After being picked, we allow it to rest for the summer until it acquires a relaxed, mature flavor before being sold. We love our regular sencha for its calm sweetness and balanced character. We love Shincha for its fleeting, energetic character that invigorates us at the start of summer.

In the morning or afternoon, before or after a meal, sencha is the perfect drink to revitalize your mind and refresh your spirits.

Ippodo Tea Co. - How to Prepare Shincha
  1. Place 10g (2 tbsp.) in kyusu teapot
  2. Add 210 ml (7 oz) of chilled water
  3. Brew for 15 min.
  4. * Make another pot using the same tea leaves. Brew the 2nd pot for 7min., and the 3rd pot for 3 min.
