*Tencha is the name for shade-grown tea leaves ground to make matcha powder.

Premium Select Matcha displays the rich, full-bodied character that we enjoy in all of our highest class matcha. Uniquely, the secondary taste notes of this blend change each year, thanks to the climate and growing conditions in Kyoto.

In a few words, the 2024 release of Premium Select Matcha is round, clean, and fresh.

It offers a complex experience. At first sip, it is clean, smooth, and approachable. However, after swallowing, its round, rich umami starts to blossom, filling the whole palate. Though the finish is long and full, the overall experience feels clean and lightweight.

To make comparisons, the initial fresh moss-like character opens up to a round umami that reminds us of a crisp Parmesan. Its fragrance is sweet and lush, while its color is verdant like the spring undergrowth in the mountains south of Kyoto.

This is an accessible, low-astringency release of Premium Select Matcha, and we recommend it to new matcha drinkers as well. Seasoned matcha fans will enjoy the complexity of its taste from beginning to end. When preparing it, try mixing just with hot or cold water to fully enjoy its nuances. Enjoy after breakfast to start off the day feeling fresh, or at teatime, pair with something light like a piece of dried fruit.

Ways to Prepare

The standard matcha whisking method, made to be a normal, liquid consistency.

1. Sift matcha
2 g (0.07 oz)
1.5 heaping tea ladles or 1 level teaspoon.

Usucha (Classic Matcha)
1. Sift matcha
2 g (0.07 oz)
1.5 heaping tea ladles or 1 level teaspoon.
2. Add hot water
60 mL (2 oz) 80°C (176°F)
Pour boiling water into a teacup to cool it to 80°C, then pour into tea bowl.

3 heaping tea ladles or 2 level teaspoons.
2. Add hot water
30 mL (1 oz) 80°C (176°F)
Cool boiling water to 80°C in teacup, then pour into bowl, just covering matcha powder.
