Astringent but not overwhelming, Hatsu is a good choice for simple everyday drinking, baking, lattes, and other uses.
Hatsu is the lightest character blend in our regular matcha lineup. Its taste is highlighted by astringency and a short aftertaste, and it has a refreshingly sharp personality when prepared straight as usucha. With a soft green color, it can also be a smart choice for people who enjoy using matcha in baking or in making lattes.
Ways to Prepare
I saw someone recommend this on Reddit for a matcha that is decent quality for things like lattes. I wanted something that would be good, but isn’t so amazing that more expensive qualities would be lost in a latte, and this has been perfect. It’s much nicer than a culinary matcha, and I like it better than the more expensive matchas at places like Whole Foods. I’m definitely going to reorder this and try others at a similar price point from this vendor to compare them.
I use it for baking as I consume alot for baking. It gives a light pale green and extremely light aromatic taste to my bread. If you really like matcha taste, don't bother with Hatsu for baking or drinking. You get what you pay for. I would up my game with better/pricier ippodo matcha for baking. (The picture below, I put the matcha in one of the old ippodo tin only. The original package comes in a paper box and an non resealable bag).

Love the smell and taste of the matcha. I can even smell the sweetness right after I add the water. It adds a smooth and velvety taste to my latte that I never experienced with any matcha latte. The matcha taste is so concentrated it reminds me of some Japanese matcha candies. Confident to say I will make my own matcha latte at home from now on.
I like to drink this as a latte with whole milk, honey, and a little bit of rose water. It's also great to cook with!
