Our classic recipe for sencha brews a concentrated, full-bodied cup, with a beautiful balance of umami, astringency, and fragrance. It feels wonderful when you succeed in extracting an exquisite mix of sweetness and astringency to go with your favorite confections.

Measure the leaves
2 tbsp. (10g / 0.35 oz)
Add tea leaves to a kyusu or teapot.

Add hot water
210 mL (7 oz)
80°C (176°F)
Cool boiling water to 80°C by transferring once.

Brew
60 seconds
Brew without stirring or disturbing the tea leaves.
For a fast, fragrant pitcher of iced tea, brew a strong batch of sencha using boiling hot water, and then pour over ice, diluting its strength and balancing its flavor.
